Nono’s Favorite Peanut Butter Chocolate Chip Cookies

Most of the time, the best things in life are the simplest, right?! These peanut butter chocolate chip cookies are no exception to that rule of thumb. They have SIX ingredients, they literally take five minutes to pull together, and with most of the ingredients being pantry staples, you should have them on hand.

Sloane’s Nono (our version of Italian for grandpa – actually spelled Nonno) is obsessed with these peanut butter chocolate chip cookies. Obsessed to the point where we will often barter… For example, “if you make me some cookies, I will give you a bottle of the Justin Cabernet Reserve.” Now, this is easily my favorite bottle of Justin. It is questionable who wins this trade… Okay, I think I do because of how easy these cookies are. How easy? Well, these peanut butter chocolate chip cookies are ready 15 minutes after our conversation is over. In all honesty, I would eventually make them without him having to barter with me.

But, please, don’t tell him! I still like my cab reserve.

Alright, let’s get back to talking about the peanut butter chocolate chip cookies and what makes them so good:

+ Firstly, they are perfectly crispy on the outside, but chewy on the inside.

+ Secondly, peanut butter + chocolate have never had a better life together than in these cookies (sorry, Reese’s peanut butter cups, you’ve been beaten!)

+ Third, these cookies dunk well with a glass of milk (skim, homogenized, oat, almond… dealer’s choice).

+ Fourth, they are gluten-free (if that matters to you… fewer carbs, lots of sugar?).

+ Finally, from the moment you decide to make them, you can be eating them in under 20 minutes (solely because of how long your oven will take to heat up).

Should I keep going or have you skipped and gone to the recipe yet?!

Also, I want to note that my husband loves these too (not as much as Nono) but prefers cookies to be in gigantic size… that being said, make mini cookies, make big cookies, make regular cookies. All of the above will work. Enjoy!!!

Nono’s Favourite Peanut Butter Chocolate Chip Cookies

makes 24 average-sized cookies

Ingredients

+ 1 cup smooth peanut butter (I’ve always used jiffy or kraft, I don’t think organic would work out very well)

+ 1 cup brown sugar

+ 1 egg

+ 1 Tbsp vanilla

+ 1 tsp baking soda

+ 3/4 cup milk chocolate chips

Instructions

1. Pre-heat oven to 375°F

2. In a large bowl, add peanut butter, brown sugar, egg, vanilla, and baking soda. Mix together until well combined.

3. Add chocolate chips and mix until evenly distributed (if you feel there isn’t enough, feel free to toss in a few more!).

4. Using your cookie scoop or a teaspoon, drop dough onto a parchment-lined cookie sheet (my average-sized cookies = 12 cookies per pan).

5. Bake for 7-8 minutes for soft, chewy cookies, or 9-10 minutes for crispy cookies.

6. Let stand on a cookie sheet for 5 minutes before setting it on a wire rack to cool. Repeat until no more dough remains.
